If I could choose only one restaurant to visit in Goa, this would be it. Owner Bawmra Jap is a truly innovative chef, with a passion for fresh local ingredients. He and his team from Burma create magic from a tiny kitchen with an exciting modern interpretation of Burmese food in a relaxed chic garden setting. Begin with a Bomras vodka cocktail with lemongrass and ginger or a tamarind margarita. My favourite starters are the Burmese tomato salad with crispy ginger, the pickled tealeaf salad and the ridge gourd tempura. Out-standing dishes include roasted black pomfret with local cashew nuts and miso bokchoi and the slow roast Aldona pork. The sides are also delicious, especially the simple coconut rice and peas. Authentic Khao Suey must be ordered a day in advance, and for a minimum of five people. For dessert the ginger and lemongrass crème brulée is a must. Allow about 1,500 a head for a three-course meal plus drinks. Fully licensed. At the time of writing, Bawmra was busy working on a much-awaited cookbook.
